Candied Turmeric and Date Slice
After munching a piece of cooked turmeric the other day, I got to thinking about other ways I can incorporate the medicinal properties of turmeric into my diet. Hence this slice.
You need to candy the turmeric first. Don't worry, it doesn't take long if you just do a tiny bit for this recipe. The candying process consists of simmering finely chopped turmeric in half and half honey and distilled water. Depending on how much you want, will change the amount of honey, water and time it takes to 'candy out' :)

This makes a huge batch and I spoon out the FIRST HALF OF THE MIXTURE into its' tin then lightly spread in the choc chips. The second batch gets the turmeric and chopped dates addition while still in the bowl. I do this for anyone that doesn't like the turmeric and dates mix. It is a strong flavor so go easy on the turmeric.
I try to use everything in its' organic form. Please choose the freshest and most organic food you can :)
3 cups rolled oats
1.5 cups shredded coconut
1.5 cups sesame seeds
1 cup sunflower kernels
1 cup honey
1 cup of sugar
1. Use 2 slice tins. Grease and set aside (I like to put them in the fridge. I don't know why but it aids the non stick process)
2. Mix the dry ingredients.
3. Melt the butter slowly and add the honey and sugar to this mix.
4. Make a well in the dry ingredients and add the wet ingredients.
5. Spoon half of the mixture into the first tin and...
6a. For the choc chip batch just spoon as many as you'd like on top and lightly push into the mixture.
6b. For the turmeric and date batch that is awaiting your attention in the bowl, add about a tablespoon of candied turmeric, finely chopped (see recipe here) and as many chopped dates as you like.
7. Refridgerate until set, usually half an hour or so.
8. Chow down :)
